Ingredients:
- 1 can 13
- 5 oz full-fat coconut milk
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol or preferred keto sweetener
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup mixed berries strawberries, raspberries, blueberries
Instructions:
Whisk the cocoa powder, erythritol, and coconut milk together in a saucepan over medium-low heat until everything is well mixed
Stir the mixture a few times as you bring it to a simmer
Take it off the heat and add the vanilla extract
After letting the mixture cool for 10 minutes, put it in a bowl or individual serving glasses and put them in the fridge for two to three hours, until they are cold and set
Whip the heavy cream in a different bowl until stiff peaks form
It's best to fill serving glasses all the way to the top with whipped cream and mixed berries after the pudding has set
If you want, you can add more berries on top and then serve chilled
