Coconut Blueberry Waffles



Start your day with these delightful gluten-free Coconut Blueberry Waffles. They're fluffy, full of coconut flavor, and bursting with juicy blueberries.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup coconut flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp coconut sugar
  • 1 cup unsweetened coconut milk
  • 2 large eggs
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries

Instructions:

Follow the directions that came with your waffle iron to get it hot

Gluten-free all-purpose flour, coconut flour, baking powder, salt, and coconut sugar should all be mixed together in a large bowl

Take out a different bowl and mix the eggs, melted coconut oil, vanilla extract, and coconut milk with a whisk

Add the dry ingredients to the wet ones and mix them together until everything is well mixed

You can now add the fresh blueberries

Put a little coconut oil on the waffle iron to keep things from sticking

Fill the waffle iron with enough batter to cover the waffle grids

Put the lid back on and cook the waffles until they are crisp and golden brown

Take the waffles out of the iron carefully, and serve them right away
